Being an Assyrian family, we’ve always known one thing: food. But growing up, it wasn’t hamburgers and hotdogs. Instead, it was biryani and dolma. Our roots are what keep us searching for a hot plate of kubba hamouth at any hour of the day.
What started as a catering company to preserve our culture and cuisine became so much more than that. Why? Because these aren’t dishes made in five minutes. They’re dishes that take hours of preparation and care.
Time and Value
The time it takes to create these dishes is something every Assyrian understands—it’s a lot of time. Our mothers and grandmothers make it look effortless, but replicating their food requires patience and dedication. The value lies in the hands that create the food itself. Through the recipes and teachings passed down from the generations before us, the dishes that are staples in Assyrian culture continue to survive through time.
